Crockpot Goodness

Okay, here’s the deal on the chicken cacciatore.  I’m writing this from memory, so don’t expect any real measurements.

Skinless legs and thighs rubbed in olive oil and dipped in flour
onion (sliced)
tomatoes (I used Plum)
Chicken broth
White wine

Place chicken and veggies in crockpot.  Add a can of broth and 1 cup of wine. Sprinkle the top with oregano. Cook on low for 8 hours.  Get your grub on!

I served it with leftover mac n cheese that I had prepared the day before.  Tonight I’ll boil some pasta and toss with butter and fresh parmesan cheese (baby’s favorite).

This was a super easy dish to make.  The result was pure deliciousness.  The hardest part was taking the skin off the chicken.  My grocer didn’t sell skinless chicken.

    I would suggest browning the chicken before putting it in the crock pot to deepen the flavor.

    Aren’t crock pots amazing? There is something so comforting about walking into your home and being met wtih the smell of pure goodness. I can’t believe I slept on crockpots for so long.
